<p>Michael Pollan's book, "In Defense of Food" is my source. He has many interesting observations and facts. In looking at human eating habits over thousands of years, he discovered that humans have had diets that involved over 80,000 different species of plants and animals (fungi also). About 3,000 of these species were common to many different cultures in different geographical locations.</p>
<p>What relation do the 3,000 food species have to the modern western diet? In most western cultures we have access to a wide variety of foods so you might suspect a reasonable percentage of these foods in our current diet. Say 10%,..6%,..3%..? Most people in these cultures consume 67% of their calories from just 3 foods: SOY, CORN, WHEAT.</p>
<p>You could be scratching your scalp about what is the right percentage. How do people determine the right percentage? You are not going to find the answer in Reader's Digest or Gourmet magazine. Research into good nutrition is based on the diets of our ancestors over tens of thousands of years. It is known that our evolved digestive systems successfully process between 1% and 5% of our caloric intake from corn, soy, and wheat.</p>
<p>Your conclusion: reduce the amount of corn, soy, and wheat products in your diet. Yes, this could be one of the healthiest facts you could learn. End the food industry myth regarding these foods.</p>

Breads, pies, cookies, and baked goods in general contain too much soy, wheat, or corn derivative products.</p>
<p>Most of us like to eat processed foods that are fried in soybean or corn oil. You will find these products include chips, candies, cakes, tomato sauces, breaded chicken, taco and burrito wraps and more. The point here is that your diet is imbalanced with too many calories from corn and soy derivatives and you are stressing your digestive system.</p>
<p>On top of that, think about how much breads, cereals, pastas, muffins, and other highly processed wheat products that most people consume each day. Again, this is LOADS of unhealthy, blood-sugar spiking,nutrient-poor calories, that more than half of the population has some degree of intolerance to anyway.</p>
<p>Be reasonable and don't go to extremes. It's ok to eat cookies, pasta, and chip-and-dip when dining out. Instead of excluding these foods from your diet, set some limits and make a list of foods that you like and have them once a week for example. Forget the soda pop and deep fried foods because they are too damaging to you good health!</p>
